Title: Spice Delight Cake with Seafoam Icing

1/2cButter; softened
1 1/3cSugar
2 Eggs,large
1tsVanilla extract
2cCake flour; sifted
1tsCinnamon,ground
1/2tsNutmeg,ground
1/4tsAllspice,ground
2 1/2tsBaking powder,double-acting
3/4tsSalt
2/3cMilk,plus 1/4 cup
  Seafoam icing:
2 Egg whites,large
1 1/2cBrown sugar; packed
5tb-water,cold
1/8tsSalt
1/8tsCream of tartar
1tsVanilla extract

Recipe by: Jo Anne Merrill 1-For cake: cream butter (or margarine) and gradually add sugar. Add eggs, 1 at a time, beating well after each. Add vanilla. Sift dry ingredients together; add to batter alternately with the milk. Divide batter in half. Into one half, add the spices and mix well. 2-Grease and flour two 8-inch cake pans. Pour batter into one pan and spice batter into the other. Bake in preheated 350 degree oven 25-30 minutes. Cool and then frost.

Seafoam Icing:

Put all icing ingredients except vanilla into the top of a double boiler; place over boiling water. Beat with an electric mixer set on low speed until blended, then beat on high until mixture stands in peaks. Remove from heat and add vanilla; beat about 5 minutes until of spreading consistency. This cake recipe was a third place winner at the Del Mar county fair. Jo Anne Merrill
